OXBO HOME-MADE KETCHUP
Caramelize carrots, celery and onions with honey. Add 0.5 l of peeled tomatoes (blanched and peeled fresh tomatoes) and cook for approximately 3 hours. Season with salt and pepper, then add Tabasco to the desired level of spiciness. Blend everything with a hand blender and pass through a fine sieve. Return to the heat and simmer until the excess liquid evaporates and the desired consistency is achieved. Finish with one teaspoon of balsamic vinegar.
